Quesadillas are always a tasty and easy meal to make! They're a great change up from plain old hot dogs and burgers, too! Just follow this simple recipe and you’ll be enjoying your own delicious chicken quesadilla in no time!

Campfire Chicken Quesadillas

Yield: 4 servings

Ingredients:  

  • 2 chicken breasts

    • ¼ cup oil

    • ¼ cup lime juice

    • 1 tbl chili powder

    • Salt and pepper to taste

  • 1 cup pepper jack cheese, shredded

  • 4 flour tortillas

  • ½ medium red onion, thinly sliced

  • Sour cream (optional)

  • Salsa (optional)

Cooking Utensils:

Grilling grate for over the fire

Spatula

Foil

Combine ingredients for the marinade and marinate chicken for at least 1 hour (remember, the longer the better!). You can use a baggie for easy cleanup and storage.

Heat grill grate over fire and grill chicken until done and cut into thin strips.

Get 4 squares of foil and set the tortillas on each of them. On half the tortilla, layer cheese, chicken and onion. Fold over and carefully set on the hot grill grate for about 5 minutes, then flip using the spatula. Cook for another 5 minutes and remove. Cut into three or four pieces, and top with sour cream and your favorite salsa! Enjoy!!

*Remember, you can always change this up a bit by using a different cheese, like cheddar or monty jack, or even a smoked cheese! Green onions instead of red onions will offer a lighter onion flavor, if you aren’t a fan of the strong flavor of red onions.
