Almond Date Bites

Yield: 12 servings (2 each serving)

Ingredients:

3/4c almond butter

1c dates, finely chopped (suggested food processor)

1/3c honey

1/2c flax seed, ground

1c rolled oats

Equipment:

Mixing bowl

Food processor (optional)

Sheet tray

Wax paper

Mix all ingredients in a bowl until very well combined. Refrigerate for 30 minutes to chill for easier handling (this is optional but recommended). Form mixture into 24 balls and place on the wax paper lined sheet tray. Freeze until set, about 1 ½ hour. Store in an airtight container in the refrigerator.

Tip: Roll in some unsweetened coconut flakes for some added flavor!

Chocolate Chip Peanut Butter Cookies

Yield: 12 servings (2 per serving)

Ingredients:

1 ½ c crunchy peanut butter

1/3 c honey

1 c rolled oats

1 c mini chocolate chips

½ c flax seed, ground

Equipment:

Mixing bowl

Sheet tray

Wax paper

Mix all ingredients together in a bowl until very well combined. Refrigerate for 30 minutes to chill for easier handling. Form into 24 balls and place on the wax paper lined sheet tray. Flatten with the palm of your hand. Freeze until set, about 1 hour. Store in an airtight container in the refrigerator.
